Here is a quite wonderful pineapple, orange and ginger cake i made on Sunday.
I decided to give up sugar in cake, sweets and biscuits for lent, and 40 days feels like a whole long time suddenly. So this little number saved me somewhat as it has no sugar or wheat in it and is truly delicious. Its sweetened with dates.
